Preparation Time: 15 mins
5-6 Small florets of broccoli
1 Red bell pepper (green bell pepper can be used too)
10 Paneer cubes (cottage cheese)
4-5 Pods of garlic (peeled)
1/2 Teaspoon of freshly grated ginger
1 Teaspoon of Olive oil
1 Teaspoon of lemon juice
1/2 Teaspoon of black pepper powder
2 Cups of water
Pour water into a large container and let the water boil. Add broccoli, bell pepper and paneer cubes into the boiling water. Add grated ginger, and salt as per your taste. Lower the heat and let the mixture cook for about 8-10 minutes (depends on the size of the veggies). Remove the container and keep it aside to add the dressing.
For the dressing, crush the garlic pods and add it to a small bowl. Pour olive oil and lemon juice. Gently mix the dressing, and add the pepper powder.
Pour the dressing mixture into the soup container and gently stir it. The soup is now ready to be consumed.
