Egg Muffins


Egg is the best diet for breakfast. The protein and fat in eggs helps sustain your energy levels, keeping you satisfied for longer time. Eggs are easy to cook and if baked, they turn out to be super healthy and delicious.

Preparation Time: 35 mins

5 Large eggs (gently beaten and salted)
1 Teaspoon salted butter
1/2 Cup of finely diced vegetables of your choice(carrot/peas/spinach/mushrooms/spring onions/red onions/green chilli/sprouts/broccoli)
Pepper as per your taste (optional)
Salt as per taste

Preheat the oven for 10 minutes at 160° Celsius.
Grease a 12-cup muffin pan with butter. Evenly divide the diced vegetables into the muffin pan (Steamed veggies or boiled veggies can be used for this recipe). Pour the egg mixture into each muffin pan until the cups are almost full (leave 1/4 inch space).
Bake at a temperature of 160°C for 20-25 minutes or until a wooden pick inserted in the center of a muffin comes out clean.

Leave the muffin pan to cool. Use a knife and run it along the sides of the muffin cup. Gently remove the Egg Muffins from the muffin pan and serve them warm. Dust them with pepper (optional) for the spicy zest.
